Finally after all those cupcakes i made a cake :-) This cake is the ideal for summer since its cool and refreshing. This cake consists of a simple sponge surrounded by white chocolate and cherry mousse. The sponge is also drizzled with some cherry brandy. The topping is a cherry mirror decorated with white chocolate curls and some fresh cherries. I took some photos without the chocolate dots (the picture underneath) Think it looks more sophisticated. Which one do you prefer ?? the plain or the decorated one?

Wow! The cake looks fabulous! I love white chocolate and cherry mousse! What a fantastic combo! I wish I had a recipe for that! I've never done a cake/mousse/mirror and I've been dying to make one! but I haven't found a good recipe that's easy!
I love both cakes but if I have to choose I would choose the one without the dots.
