Once again it's time of the IC-Earth challenge. This month's ingredient is cheese. There are a variety of cheese available which I could use. What cheese shall I use? I decided on blue cheese. I was wondering what flavours I could combine with blue cheese. What goes well with blue cheese. WINE? I like wine and cheese and that's my cupcake flavour for this month's challenge. I chose to make a chocolate wine cupcake with chocolate, blue cheese frosting.

Wine and cheese chocolate cupcakes
1 cup flour
½ tsp baking powder
½ tsp cinnamon
2 Tbl cocoa
1/3 cup vegetable oil
1/3 cup sugar
¼ cup red wine
2 egg yolks
Blue cheese chocolate ganache
1.5 tsp blue cheese (a small cube)
½ cup cream
1/8 tsp ground coffee
2 heaped Tbl icing sugar
100gr dark chocolate
Method
Preheat the oven to 160 degrees Celsius. Sieve the dry ingredients. Add the sugar. In a medium bowl combine the egg yolks, oil ant the red wine. Add the wet ingredients to the dry and mix until combined. If the mixture is too stiff add a little more wine or water. Fill six cupcake liners. Bake for about 15 minutes or until a toothpick inserted in center comes out clean.
Blue cheese chocolate ganache
In a medium bowl chop the chocolate. Mix the cream, blue cheese and the coffee until small bubbles start to appear on the sides. Pour the cream on the chocolate leave to stand for one minute then mix till the chocolate mixture is smooth. Leave to cool. Then whip it and decorate.
Makes 6 cupcakes.
