Peanut butter and banana millionaire shortbread

Millionaire shortbread? banoffie pies? I don't know what to name these but they consist of a buttery shortbread base with a hint of peanut butter, a caramel filling with some banana pieces and everything topped up with a chocolate and peanut butter mixture. They re really yummy although I think next time I would omit the banana and add some chopped salted peanuts :-) Voting for the IC:E challenge is still open if you wish to vote for my rose cupcake go to http://mkecupcakequeen.blogspot.com/
Here's the recipe
Peanut butter and banana millionaire shortbread

Shortbread base
1/4c caster sugar
1 ¼ c flour
1/4 c butter
1/8c peanut butter
¼ tsp salt

caramel filling
¾ can condensed milk
1/4c light brown sugar
1tbl butter
1 banana, sliced

Topping
1tbl oil
1tbl butter
200g dark chocolate (50% cocoa)
2tbl peanut butter
3tbl icing sugar


Preheat the oven to 160 degrees Celsius.
In a medium bowl mix the flour, caster sugar and salt. Rub in peanut butter and butter until it looks like breadcrumbs. Divide between 12 cupcakes and press firmly. Bake until they’re lightly golden.

Mix the brown sugar, butter and the condensed milk in a small saucepan. On low heat stir until it thickens and is lightly golden. Take care cause it burns easily.

Slice the banana in thin slices and place them on the shortbread bases. Cover with the caramel mixture. Leave to cool.

In a double boiler mix all the topping ingredients until melted and smooth. Pour over the cooled cupcakes.
Makes 12 cupcake size.

Snooky, this recipe is totally awesome. You managed to mix shortbread, bananas and chocolate :) I want to be a millionaire! Well at least my stomach will feel like it if I have one of these...

I made these last night for a get-together, and we immediately christened them 'diabetes-cakes' because they will give you diabetes INSTANTLY, right after they shoot you into a sugar-induced coma. That being said, they were delicious and now they're all gone.
