Blackberry cream cupcakes

I made these cupcakes a few weeks ago when I still had some blackberries available. I used a basic vanilla cupcake, to part of the batter I added some squashed blackberries and tho others I added whole blackberries. For the frosting I just whipped some cream and added some mashed blackberries (very few).
Help: can anyone suggest a good cream cheese frosting recipe?

  1. You can do like this:
    225 g cream cheese room temperature
    56 g butter softened
    140 g powdered sugar
    vanilla extract
    Cream together the cheese and butter. Add the vanilla and slowly add the sugar.

    Or, you can replace the butter with whipped cream. Just beat only the cheese, add the sugar and then mix in the cream.

    Or:
    200 g sugar
    4 egg whites
    335 g cream cheese
    vanilla extract

    Put the sugar and egg whites in a mixer bowl or another large heatproof bowl, fit the bowl over a plan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 3 minutes.
    The sugar should be dissolved, and the mixture will look like shiny marshmallow cream.
    Remove the bowl from the heat.
    Working with the whisk attachment or with a hand mixer, beat the meringue on medium speed until it is cool, about 5 minutes.
    Switch to the paddle attachment if you have one, and add the 1/3 of the cheese, beat until smooth and continue untill all the cheese is added.
    Once all the cheese is in, beat in the frosting on medium-high speed until it is thick and very smooth, 6-10 minutes.

  3. YUMMM! These cupcakes look delicious!
    The Cream Cheese Frosting recipe I use and LOVE is:
    1/2 cup softened butter
    2 pckgs. softened cream cheese (whole fat, not reduced fat)
    1/2 tsp. vanilla extract
    5 cups sifted powdered sugar!

  6. I had no idea how pretty mashed blackberries are in that frosting, that's a cool color!

    Wish I could help you out with cream cheese frosting, but I'm just not a big fan.

  9. There are so many types of berries and accordingly huge number of recipes for each. Berries are just awesome and make great desserts. Your cupcakes look beautiful.

  21. i love berry topped cupcakes... these are so cute.

    I do 1/2 cup unsalted butter, 1/2 cup full fat creamcheese, 3 cups sifted icing sugar and 1 teaspoon pure vanilla extract for my creamcheese frosting!!
